Cook a steak to your doneness

Dry it and salt it early.
Pat bone dry, salt generously, leave it out for forty minutes. Wet meat steams instead of searing.

Get the pan properly hot.
Heavy pan, high heat, until the oil shimmers. A timid pan gives you grey meat.

Sear without moving it.
Two to three minutes a side for a crust. Move it once, not constantly.

Finish with butter and check the temperature.
Butter, garlic, thyme, spoon it over. Probe reads 52°C rare, 57°C medium rare, 63°C medium.

Rest it half the cooking time.
Five minutes minimum. Cut too early and the juice ends up on the board.
