Taste and fix a dish while cooking
-
Taste at every stage.
A spoon per phase, not one anxious taste at the end when nothing can change.
-
Bland usually means salt.
Add a pinch, taste, repeat. Salt does not make food salty first; it makes it taste like itself.
-
Flat means acid.
A squeeze of lemon or splash of vinegar wakes a dish that salt cannot. This is the most missed fix in home cooking.
-
Harsh means fat or sweet.
Butter, cream or a pinch of sugar rounds sharp tomato and chilli edges.
-
Fix too-salty with dilution.
More of everything else: water, unsalted stock, potato, cream. The floating-potato-only trick is a myth.

#1 becomes the Core. This atoma is young: submit a better distillation and take the seat.
No gear needed. Your pot, a timer and ice are enough. That is the point.
